Surfin’ Skint: cheap eating

Apparently we’re all tightening our belts in anticipation of skinnier times to come.

So, your webmaster has had a thought… why not create an occasional series about living low on the hog? Surfers are famous for their short arms and deep pockets, so it just seemed a natural fit.

While we aren’t exactly talking depression just yet, I reckon there’s plenty we could learn from that famous era. Like depression cooking, well okay, not depression cooking, but depression era style cooking.

What’s your favourite cheap, but filling and nutritious dish or recipe? (not talking takeaways here)

Here’s a for instance:

Chicken burritos el Don style

big flour tortillas
can of refried beans
can of new potatoes
small can sweet corn kernels
taco sauce
500g chicken
tasty cheese

Method: dice the chicken up, dice the potatoes to similar size, brown the chicken and the potatoes, then mix in corn kernels and refried beans and taco sauce. I sometimes chuck in some boiled rice and a can of mexe beans. Smoosh it all together and keep mixing it on heat until the refried beans just start getting gloopy. Get a large fypan and heat the tortillas up so they’re floppy. Then grate some cheese on to em and dollop the mixture in on top (you can add some chopped lettuce and tomato chunks too). Roll up and eat while hot. You can feed 3-4 to people on this for around $5 or $6 a head.

I reckon you should have no trouble topping that!
